Holy cow it is MAY 5th today! Which in case any of you are counting (which I am sure you are not) we are less than 2 months from the big wedding date! Eeek… and because I didn’t post the post that I had planned on May 2nd to signify the “2 month mark”, I will go ahead now and embarrass myself with the iphone picture that was taken minutes after the surprise proposal on Signal Hill, in St. John’s, Newfoundland. Okay it’s not too embarrassing, it just does a great job depicting my excitement!
Anyways, getting back on track. Today is the grand ol’ celebration of Cinco de Mayo. For anyone out of the loop (or in Canada) this is NOT Mexican independence day, but is a day that recognizes an unlikely battle won by the Mexican Military over the French! Woohooo! And for the most part this day is not as much recognized by the Country of Mexico as it is by the American population… or the college student population! Double Wooohoo!
Today also marks the last day of classes for me this semester. This is “finals” week. And to celebrate the double occasion I thought it would only be appropriate to have cake and something Mexican… Mexican Chocolate Cupcakes!
Well that was an easy decision! Now I have to apologize because that’s all for today! I have my final final tomorrow and a hard bike workout for tomorrow morning so I need to go to bed! I’ll fill you in on the Mexican chocolate cupcake recipe later, once I have received ample feedback form my classmates!
With my school bag packed for tomorrow, I’m armed and ready to go!
